Let the adventures begin.

Stephen and I have just begun our new adventure: USA – Japan – Hong Kong – China – New Zealand. Estimated return to Australia: unknown.

This morning we left little old Adelaide, bound for Houston USA. We managed to travel back in time, and arrived into Houston the afternoon of the same day! 😉

It’s hot and humid here, not at all what I was expecting. I was imagining crisp fall weather, cool breezes and autumn leaves all around. Having packed our suitcases full of winter clothes for Japan, I am a little ill-prepared, but it’s ok, at least I brought my havii’s with me.

The view flying into Houston today.

Sliders from scratch.

Stephen and I love pork, and we love sliders. Today I decided I wanted to make some but I didn’t want to go to the shops to by ANY ingredients. So, I had to get creative and try some new recipes. We only had a pork leg roast in the freezer (and most recipes called for the shoulder), but I think it’s pretty safe to say, they turned out AMAZING!

So, here’s how I made them.

Pulled Pork (in the slow cooker):
1.5-2kg pork roast (I used leg, but shoulder is meant to be great)
2 onions
1 cup BBQ sauce (I make my own using this recipe)
1/2 cup apple cider vinegar
1/2 cup liquid vegetable stock (I use TM stock paste mixed with water)
2 tablespoons brown sugar
1 tablespoon mustard (I used dijon, but lots of recipes recommend hot english)
1 tablespoon worcestershire sauce
1 teaspoon chilli powder (or more if you like it hot!)
3 cloves of crushed garlic
3 sprigs of thyme (or dried if you don’t have fresh)

  1. Slice onions into big rings and place on the bottom of the slow cooker. These are what the pork sits on top.
  2. If the pork has string around it cut it off and place the pork roast on top of the onions in the slow cooker.
  3. Mix all of the remaining ingredients together in a jug or bowl, and then pour over the pork roast. The smell is quite strong, but don’t be put off, the end result is delicious.
  4. Leave to cook in the slow cooker. Every slow cooker is different, but my 1.8kg roast took 5 hours on high. Perhaps 8-10 hours on low would have also worked.
  5. Once the pork is cooked remove it from the slow cooker. Take off the layer of fat/skin and discard. Shred the pork using two forks.
  6. Take half of the sauce left in the slow cooker and discard. Then put the shredded pork back into the cooker with the remaining sauce and let it stew for 10 minutes or so (or until you’re ready to serve).
    And done!

Brioche buns:
To make the buns I used this fantastic recipe. It was the first time I had ever made brioche and it turned out light and fluffy and fantastic! Thank you Maureen and my faithful thermomix.

Fillings:
To serve we added spinach, and I whipped up a quick coleslaw in the thermomix using purple cabbage, carrots, and apple with a bit of yogurt, lemon juice and salt and pepper.

And voila, sliders!

Bestie comes to town.

What a great weekend. Although the weather was the complete opposite of last weekend (aka: it was shit!) we still made the most of it and had a great time up at Falls Creek.

My bestie and her husband, along with their daughter, miss-5 and miss-almost-2, made the journey over from Adelaide by car (brave parents!). They got here in one piece and we were all excited about our trip to the snow. We booked an apartment through air bnb, which was simple and good value for money. The girls were decked out in all their new snow gear, and everyone was keen to hit the snow.

However, the weather thought otherwise. This first day rained ALL day. Not a little bit of light drizzle, but a deluge of heavy, windy rain. So we remained inside most of the day, venturing out whenever the downpours became less heavy.

Day 2 was better. The rain stopped over night and a big dumping of fresh snow awaited us in the morning. Miss-5 was especially happy with this! The rain persisted in the afternoon, coming back with even more ferocious winds, yet we still ventured out at times. Miss-5 had her first ever go at skiing and went to a lesson. She loved it!!

Overall what could have been a really depressing weekend was actually really fun. It reminds us that we can’t control everything and we have to make the most of every situation. It was so nice being able to spend time with close friends, as well as get them addicted to the snow so we can have more snow-buddies next season 🙂

Emma comes to town. 

Emma arrived on the train into Albury station on Thursday afternoon and we have had such a great weekend together. We went up to Falls Creek and spent a full day in the snow tobogganing, snowboarding, exploring and building snowmen! Throughout the weekend we visited Bright, stopped off at the bakery in Beechworth, had an amazing sausage roll from Treats cafe in Mount Beauty, laughed at people playing PokemonGo at the Hume dam, took in the breath taking view from the top of Huon Hill, and simply caught up like old times.

Wodonga appreciation post.

9 months ago I moved to Wodonga. Within 5kms of our house is a wonderful nature reserve that I love walking through (yes, sometimes I complain because I’m too tired to walk all the way to the top of the hill, but I still love it! haha).
The air is fresh and cool. The native scrub is full of wildlife – kangaroos, echidnas, lots of birds, and some friendly cows. And the scenery is beautiful.

The reserve is actually full of bike tracks, but there are some really nice walking tracks too. Every time we go we try to take a different path. We’ve decided to make an effort to walk to the top at least once a week.

Creamy coconut banana porridge

By the end of this week I had so many overripe bananas on the bench that Stephen and I didn’t want to take to work that I had to do something! Normally we just peel them and put them in the freezer (great for morning smoothies!), but we already have about ten in there because I got a big brown bunch from the markets for cheap the other week.

So I had to think outside of the box. I made Alexx Stuart’s delicious banana loaf recipe, which Stephen loves! And still had one more lonely brown banana. If you know me, you know I loath food wastage, so i thought I’d sleep on it (the idea, not the banana) and hopefully be inspired in the morning.

Well…I wouldn’t say I woke up inspired, but I did wake up hungry, and hunger is a pretty strong motivator for me! Stephen and I lay in bed with the curtains slightly open listening to and watching the rain drizzling down all over the front garden. Porridge weather!! I wanted something warm and substantial because we have a big list of things to do today, and we often don’t get around to eating lunch until later in the afternoon. I’m also a strong believer in healthy fats to boost your metabolism and keep you feeling full, so I didn’t hold back!

What developed over the next fifteen minutes or so was simply delicious! And something I will definitely make again. Introducing Creamy Coconut Banana Porridge. The banana makes it so creamy, and the fact that I used coconut milk also makes it dairy free (if that’s something you need to factor in). I topped it with some frozen blueberries, coconut flakes and cacao nibs. Who would have thought healthy porridge could taste so amazing!

1 big serving, or 2 small snack size servings

Ingredients:

1/3 cup oats
3/4 – 1 cup water (depending on how thick/runny you like it)
1/4 cup coconut milk (I use Ayam brand because their tins are BPA free and the milk contains no additives or nasties)
1/2 – 1 ripe banana
1 tablespoon coconut oil
1 tablespoon nut butter (I used almond because it’s my favourite!)

Toppings: blueberries, cacao nibs, coconut flakes (anything you want!! Honey, bee pollen, berries, nuts, seeds, whatever you fancy)

Method:

Put oats, water, coconut milk and sliced/mashed banana into a small saucepan.

Heat for approximately ten minutes (or until the liquid has been absorbed) stirring occasionally.

Once it’s looking nice and thick, turn off the heat and stir through the coconut oil and nut butter.

Pour into a bowl and top with whatever you’re in the mood for.

Anzac Day Golf

We enjoyed the public holiday today, and took a moment to remember the reason for it. We are both so grateful for the valiant men and women from Australia and New Zealand who served our countries and helped forge the freedom we live in today.

In celebration, Stephen and his mate Dameo took part in Albury golf course’s Anzac Day Two Man Ambrose competition. Stephen wanted me to go along and watch/support him, so I requested that I get to drive the golf cart around all day. And that I did!

It was the most beautiful day, and the golf course was lovely, with lots of native birds and kangaroos around about the place. Stephen and Dameo came 29th out of about 50. A good result for their first comp and the fact that they only joined the club and started getting back into the sport a month or so ago.

Well done gentlemen.

Another weekend, another wedding ðŸ’š

Yesterday we celebrated Stephen’s cousin Casey’s marriage to Adam. It was another beautiful wedding in the Adelaide hills.

The late afternoon wedding was spectacular, as Casey and Adam became man and wife in front of an old barn at the Farm Shed in Hahndorf. The cool afternoon called for warmer clothes and I was happy to be able to wear my new coat.

The evening progressed with a lovely cocktail style wedding, with fires blazing and delicious local South Australian food and drinks.

MEGA ADVENTURE PARK. 

Today Stephen, my cousins Kirsty and Nick, and myself all went the the new Mega Adventure Park at West Beach.

Mega Adventure is an aerial SkyMate structure that takes adventure to a whole new level! After getting harnessed up and learning how to clip on and off with our safety likes we made our way up the structure. We played totem tennis in the sky, ‘rowed’ a boat mid-air, and manoeuvred between obstacles like a floating esky, a BMX bike and a sky-high picnic table. My favourite was the different trapezes – so much fun!

A new sister. 

Once again, Stephen and I made our way back to Adelaide earlier this week. Why? Weddings, wedding, weddings!

Today in the Adelaide hills, at Nepenthe winery, a relaxed Australian style wedding took place with close family and friends celebrating the marriage of Mr and Mrs Macaulay. My little brother got hitched, and I gained a new sister! It was such a lovely afternoon.

The ceremony was beautiful, with the vineyards in the background and the afternoon sun peaking out between the clouds. Cam and Ellen exchanged their own vows and before we knew it they were man and wife.

The afternoon rolled into evening playing lawn games and drinking delicious Nepenthe wines. The food, catered by Two Brothers, was unbelievably scrumptious, and there was plenty of it. Dessert was amazing too, with cheese cakes and Beetroot mud cake from The Seasonal Garden Cafe.

Overall, the night was wonderful. The speeches were great, the photo booth was so much fun, and our family from New Zealand even flew over to join in the celebration.
